True estate coffees represent less than one percent of the world's total
coffee harvest. They are without a doubt "La crème de la
crème." The coffee
is proudly grown, harvested and milled by the same family for generations
with the emphasis on the quality of coffee rather than the costs of
production. The Coffee Source is composed of a group a Costa Rican
coffee-producing families who for generations have adhered to a strict
tradition of quality, and now are proud to share that tradition with
you.
At The Coffee Source we select only high mountain coffees which are considered Strictly Hard Bean. Our estate coffees come from the finest growing regions in Costa Rica: Cumbre Tarrazú from the famous Tarazú region, Doka Estate from Sabanilla de Alajuela, San Antonio Estate from the Tres Ríos region, and San Juanillo from the slopes above Naranjo.
To ensure that all of our coffees have reached the perfect stage of ripeness, we wait until mid-harvest, when all of the beans are at their optimum level of maturation. The coffee is immediately gathered to prepare for the wet process. We then carefully spread the coffee out on our patios to dry the old-fashioned way, in the warmth of the Costa Rican sunshine. Methodically turning the coffee on our patios, it may take us up to 15 days for the coffee to reach its ideal humidity level of 11%. (Compare this to 10-20 hours using industrial heat dryers). Few producers still use this time-consuming method, but we're convinced that the difference comes through in the coffee we so proudly produce: 100% SUN DRIED.

After sun-drying, we carefully remove the "pergamino", which is the bean's outer protective shell. It is here that we finally expose the dark green bean or "oro" and prepare the coffee for further classification. Bean by bean the coffee is now inspected again for defects, which can only be seen by a trained human eye. Only those perfect in size, formation and color are selected for delivery. But our commitment to quality doesn't stop with the preparation of the coffee itself. At The Coffee Source we believe the only way to experience the just harvested flavor is to vaccum-pack it immediately on our estate. This unique packaging method captures the natural freshness of the bean, and ship it to you in convenient boxes, designed with the small roaster in mind.

That's why we donate 5 cents from every pound of coffee sold to the Neotropica Foundation, a leading Costa Rican environmental organization, as well as 2 cents per pound to FINCA, which establishes "Village Banks" for the poor in Costa Rica and other coffee growing regions.
